Recipe Friday: Broiled Tilapia Parmesan

My husband isn't the biggest lover of fish dishes, except of course authentic fish and chips (what can I say, he's British). So he wasn't too excited when I told him that I was going to try a new fish recipe that I found on Allrecipes.

It received such high reviews from over 3,000 people so I thought,"How bad can it be?" Needless to say, it was a hit! My husband said he loved it, and even asked me to make it again for him so I know he wasn't bluffing! And he's quite the poker player so sometimes it's hard to tell by his expressions. Anyway, here is the recipe. Enjoy and let me know what you think!

Ingredients:

1/2 cup parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

Directions:

  1. Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.

  2. In a small bowl, mix together the parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.

  3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

I have never had tilapia before. This recipe looks yum-o. Maybe I should give it a try.

My hubby likes tilapia, but I have NEVER cooked fish before. This looks easy enough that I might try it!

Oooh, that looks yummy! I will definitely try to get that made for my family. Kai even likes fish, so I'm slowly getting my kids won over to my side. ;)

I always buy a big thing of tilapia at Costco so I usually have some in the freezer. Can't wait to try it!
